Vegan Lentil & Vegetable Stir-Fry

A quick and nutritious meal loaded with protein and fiber.

Ingredients:

  • 1 cup cooked lentils (green or brown)
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1 small zucchini, sliced
  • 2 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp sesame oil
  • 1 tbsp maple syrup (or agave)
  • 1/2 tsp red pepper flakes (optional)
  • 1 tbsp sesame seeds (for garnish)
  • Green onions, chopped (for garnish)

Instructions:

  1. Heat sesame oil in a pan over medium heat. Add garlic and ginger, sauté until fragrant.
  2. Add broccoli, carrots, and bell pepper. Stir-fry for 3–5 minutes until slightly tender.
  3. Add zucchini and cooked lentils, stir well.
  4. Pour in soy sauce and maple syrup. Add red pepper flakes if using. Stir-fry for another 2–3 minutes.
  5. Remove from heat, sprinkle with sesame seeds and green onions.
  6. Serve over rice or quinoa.
