A quick and nutritious meal loaded with protein and fiber.
Ingredients:
- 1 cup cooked lentils (green or brown)
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 1 small zucchini, sliced
- 2 cloves garlic, minced
- 1-inch ginger, grated
- 2 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp sesame oil
- 1 tbsp maple syrup (or agave)
- 1/2 tsp red pepper flakes (optional)
- 1 tbsp sesame seeds (for garnish)
- Green onions, chopped (for garnish)
Instructions:
- Heat sesame oil in a pan over medium heat. Add garlic and ginger, sauté until fragrant.
- Add broccoli, carrots, and bell pepper. Stir-fry for 3–5 minutes until slightly tender.
- Add zucchini and cooked lentils, stir well.
- Pour in soy sauce and maple syrup. Add red pepper flakes if using. Stir-fry for another 2–3 minutes.
- Remove from heat, sprinkle with sesame seeds and green onions.
- Serve over rice or quinoa.
