A hearty and flavorful dish that’s packed with protein and nutrients.
Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 cups fresh spinach
- 1 small onion, diced
- 2 cloves garlic, minced
- 1-inch ginger, grated
- 1 can (14 oz) diced tomatoes
- 1/2 cup coconut milk
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp garam masala
- 1/2 tsp chili powder (optional)
- Salt & pepper to taste
- 1 tbsp olive oil
- Fresh cilantro for garnish
Instructions:
- Heat olive oil in a pan over medium heat. Add onions and sauté until soft.
- Add garlic and ginger, sauté for another minute until fragrant.
- Stir in cumin, turmeric, garam masala, and chili powder. Cook for 30 seconds.
- Pour in diced tomatoes and cook for 5 minutes until slightly reduced.
- Add chickpeas and coconut milk, simmer for 10 minutes.
- Stir in spinach and cook until wilted. Season with salt and pepper.
- Garnish with fresh cilantro and serve with rice or naan.
