Vegan Chickpea & Spinach Curry

A hearty and flavorful dish that’s packed with protein and nutrients.

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups fresh spinach
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup coconut milk
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1/2 tsp chili powder (optional)
  • Salt & pepper to taste
  • 1 tbsp olive oil
  • Fresh cilantro for garnish

Instructions:

  1. Heat olive oil in a pan over medium heat. Add onions and sauté until soft.
  2. Add garlic and ginger, sauté for another minute until fragrant.
  3. Stir in cumin, turmeric, garam masala, and chili powder. Cook for 30 seconds.
  4. Pour in diced tomatoes and cook for 5 minutes until slightly reduced.
  5. Add chickpeas and coconut milk, simmer for 10 minutes.
  6. Stir in spinach and cook until wilted. Season with salt and pepper.
  7. Garnish with fresh cilantro and serve with rice or naan.
