Easy Chickpea Curry (Channa Masala)

A flavorful, protein-packed Indian-inspired dish that’s quick, easy, and perfect for a cozy meal!

Ingredients:

  • 1 tbsp coconut oil or olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 green chili, finely chopped (optional, for heat)
  • 2 tsp cumin
  • 1 tsp coriander powder
  • 1 tsp turmeric
  • 1 tsp garam masala (or curry powder)
  • œ tsp paprika or cayenne (optional, for spice)
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) chickpeas, drained and rinsed
  • œ cup coconut milk or water (for a creamier version)
  • œ tsp salt (adjust to taste)
  • ÂŒ tsp black pepper
  • 1 tbsp lemon juice (for freshness)
  • ÂŒ cup fresh cilantro, chopped (for garnish)

Instructions:

  1. Sauté Aromatics: Heat oil in a pan over medium heat. Add onions and sauté until golden. Stir in garlic, ginger, and green chili, cooking for 1-2 minutes.
  2. Add Spices: Stir in cumin, coriander, turmeric, garam masala, and paprika. Cook for 30 seconds to release flavors.
  3. Cook Tomatoes: Pour in diced tomatoes and cook for 5-7 minutes until they break down and thicken.
  4. Simmer Chickpeas: Add chickpeas, coconut milk (or water), salt, and black pepper. Simmer for 10-15 minutes until flavors meld.
  5. Final Touches: Stir in lemon juice and garnish with fresh cilantro.
  6. Serve & Enjoy: Pair with rice, naan, or quinoa for a satisfying meal!
